These peanut butter cookies cook up a little crispy on the outside and soft in the middle, the way all good peanut butter cookies should be. And they will also make your gluten-free friends smile. With only 6 ingredients, these treats are easy to make and in the oven in around 10 minutes.
One suggestion would be to use all-natural peanut butter. If you use Jif or Skippy, you're adding a bunch of sugar and oil and whatnot to the recipe and it kind of screws it up. But who knows, maybe you'll like that way.
Ingredients
- 2 cups of peanut butter
- 1 1/2 cup of sugar
- 2/3 cup of applesauce
- 2 teaspoons of baking soda
- 1 teaspoon of vanilla
- pinch of salt
Method
Step 1
Preheat the oven to 350.
Step 2
Put the peanut butter in a bowl (and mix if it has separated from the oil). Add the sugar and beat.
Step 3
Add the applesauce and beat.
Step 4
Add the other three ingredients and beat.
Step 5
Roll into 1" balls and put on a lightly oiled baking sheet. Allow 2" between the dough for it the bake out.
Step 6
With a fork slightly flatten the cookies, and bake for 8-10 minutes. Allow to slightly cool before transferring to a cooling rack. Serve cooled.
